Traditional North Indian Cuisine - With A Modern Touch
When Rajesh and Neena Verma came to Vancouver from their native India in 2012, they brought with them a family tradition of hospitality, restaurant mnagement, and traditional Northern Indian cuisine. Six years later they found the right location at the right moment and in 2018 the couple opened Modern Handi at 827 Denman.
The name “Handi” refers to the traditional, thick-bottomed clay pot with a narrow top that allows for lengthy simmering, which produces rich, deeply spiced flavors. For three generations the Verma’s extended family has presented North Indian cuisine in the finest traditional way, now serving their unique dishes in restaurants as far-flung as Delhi, Vancouver, and Paris.
The “Modern” in Modern Handi is a nod to chef Rajesh’s mastery of not only the traditional dishes of Northern India, including the familiar to Vancouver Punjabi cuisine, but also his talent for creating recipe updates using contemporary ingredients and culinary techniques.
“We like to take the best of everything, new and old, use fresh and sustainable ingredients, and give it all our own special touch” they explain.
The Chicken Methi, cooked with fenugreek leaves and carlic, and Mango Chicken are just two examples from their extensive menu of that special touch.
